ALCAT Food Sensitivity Testing in Chandler, AZ

When Food Is the Problem and Nobody Can Tell You Which One

Food sensitivities aren’t allergies. They don’t show up on allergy tests, they don’t cause hives or anaphylaxis, and the reaction can lag hours or days behind the meal that caused it — which is exactly why people can’t figure them out on their own.

What ALCAT Testing Actually Measures

The ALCAT test examines how your white blood cells respond when exposed to specific foods, additives, and chemicals in a lab setting. Cells that change size or react are flagged, and results come back sorted into reactive, borderline, and non-reactive categories.

Panels can cover well over a hundred items — common foods, food colorings and preservatives, molds, herbs, and in some panels medications and environmental compounds.

Being Straight With You About This Test

We’d rather you hear this from us than find it later.

ALCAT is not an allergy test, and it does not diagnose food allergy. If you have true allergy symptoms — hives, swelling, throat tightness, trouble breathing — you need a board-certified allergist and IgE testing, not this. We’ll refer you.

ALCAT is also not universally accepted in mainstream allergy medicine, and the research behind it is mixed. Some clinicians consider it a useful starting framework for an elimination diet; others don’t. We’re telling you that up front because you deserve to make an informed decision about your money.

What it can do is narrow a very long list into a short one, giving structure to an elimination and reintroduction process that would otherwise take months of guesswork. The elimination and reintroduction phase — actually removing the foods and watching what happens in your body — is where the real answer comes from. The test guides that work. It doesn’t replace it.

Who Tends to Benefit

People who keep hitting the same wall: chronic bloating, gas, or unpredictable digestion. Headaches or migraines that seem tied to meals but never consistently. Fatigue that spikes after eating. Brain fog and difficulty concentrating. Eczema, acne, or skin flare-ups that come and go. Joint aches without a clear cause. IBS symptoms that haven’t responded to standard treatment. Weight that won’t move despite a reasonable diet.

If you’ve already done elimination diets on your own and ended up more confused than when you started, this is the situation ALCAT is designed for.

How It Works Here

We talk first. We go through your symptoms, timing, current diet, and what you’ve already tried. If your history points toward true allergy, celiac disease, or another condition, we test for that instead — no point spending money on the wrong answer.

Blood draw. One appointment, straightforward.

Results, interpreted. Dr. William A. Gaspar, MD, a board-certified internist with 28 years of clinical experience, reviews your results with you. A long list of flagged foods isn’t a list of things you can never eat again, and interpreting it that way is how people end up with needlessly restricted diets.

A structured elimination plan. We prioritize the highest-reactivity items, give you a realistic eating plan, and set a timeline.

Reintroduction — the part that matters. We add foods back systematically so you learn what your body actually does with each one. That knowledge stays with you.

Why Patients Choose B Hive

We’ll say no when it’s the right call.

If you have symptoms of true food allergy, you need an allergist, not this test. If you have a history of disordered eating, restrictive elimination protocols can do real harm, and we’ll talk through gentler approaches. If you’re pregnant or breastfeeding, significant dietary restriction needs careful medical oversight. And if your symptoms point more clearly toward celiac disease, IBD, H. pylori, SIBO, or a thyroid condition, testing for those comes first.

Our physician reviews your results alongside your full picture — gut health, thyroid, hormones, nutrient status, medications — and can test for those too if the pattern points there. Sometimes food isn’t the driver at all. We’d rather find that out than let you rebuild your entire diet around the wrong theory.

Sensitivity, Intolerance, or Allergy — They’re Not the Same Thing

People use these terms interchangeably, and it costs them years of chasing the wrong answer.

A food allergy is an immediate immune response involving IgE antibodies. Symptoms show up within minutes — hives, swelling, vomiting, trouble breathing — and can be life-threatening. Diagnosed by an allergist with skin prick or IgE blood testing.

A food intolerance is a digestive problem, usually a missing enzyme. Lactose intolerance is the classic example: no immune system involvement, just bloating, gas, and cramping when you can’t break something down.

A food sensitivity sits in between and is the murkiest of the three. Symptoms are delayed — often hours to days — and tend to be systemic rather than purely digestive: headaches, fatigue, brain fog, joint aches, skin flare-ups. The delay is exactly why people can’t connect the dots on their own.

ALCAT testing is aimed at that third category. It won’t identify an allergy, and it won’t diagnose lactose intolerance or celiac disease. If your symptoms point to either of those, we test for those instead.

What’s Typically on the Panel

Depending on the panel size you choose, testing may evaluate reactions to:

Common foods — dairy, eggs, wheat and other grains, soy, corn, nuts, seafood, meats, fruits, vegetables, and legumes

Food additives — colorings, preservatives, sweeteners, and emulsifiers that rarely get considered when people troubleshoot their diet on their own

Molds — including those found in aged cheeses, fermented foods, and the environment

Herbs and spices — common seasonings that show up in nearly every meal and get overlooked

Functional foods and medicinal herbs — supplements and botanicals you may be taking daily

Larger panels may also include environmental chemicals and specific medications. We’ll walk through the options and what each one covers before you decide.

Why the Additives Matter More Than People Expect

This is the part that surprises patients most. Someone eliminates dairy, gluten, and soy, sees partial improvement, and assumes they’ve found it — while the actual driver is a preservative or coloring that survives every elimination round because nobody thinks to look at it.

Additives show up across processed foods, sauces, dressings, and even “clean” products. If your symptoms persist through careful whole-food elimination, this category is worth examining.

Frequently Asked Questions

Do I need to eat the foods before testing?

Generally yes — the test measures how your cells react to foods your body has been exposed to. We’ll give you specific instructions when you schedule.

Certain medications, particularly steroids and some immune-modulating drugs, can influence results. Bring your complete medication list to your consultation.

Dietary restriction in children requires careful oversight to avoid nutritional gaps. This is a conversation to have with our physician first.

IgG panels measure antibody levels, which often simply reflect foods you eat regularly. ALCAT measures a cellular reaction instead. Both approaches have limitations and neither is a diagnostic test — which is why interpretation by a clinician matters more than the panel you pick.

That’s common, and it doesn’t mean you can never eat those things again. A long list sometimes points to underlying gut inflammation driving broad reactivity — in which case we address the gut rather than eliminating half your diet.

Yes. We provide a practical eating plan, and if nutrient gaps are a concern we can test for deficiencies and support with IV nutrient therapy.
